Spicy Soupy Tomato Lentil Mix

Ingredients required for recipe:
400 gm. (13 oz.) of chopped tomatoes
Two and a half pints (1.5 liter) vegetable mix mentioned below
1 tbsp. of vegetable oil
2 finely chopped garlic cloves
1 tbsp. of chopped fresh coriander
2 tbsp. tomato puree
1 finely chopped large sized onion
1 deseeded, finely chopped small green chili (not too spicy)
Half a tsp. of ground ginger
1 bay leaf
3 thinly sliced 3 celery sticks
Half a tsp. of turmeric (ground)
8 oz. (250 gm.) red lentils (washed, soaked and drained)


Freshly ground black pepper and natural yoghurt to garnish the recipe

Preparing Spicy Soupy Tomato Lentil Mix:
Step 1: Heat the oil in a large saucepan.

Step 2: Add garlic, onion, and chili. Gently shallow fry for about 5 minutes till the onions turn golden brown

Step 3: Add the lentils, leaf, carrots and the vegetable mix. Cover and bring the recipe to boil. Then reduce the flame and simmer for about half an hour until the material inside (lentils) becomes softened. Remove the bay leaf.

Step 4: This step includes adding tomatoes, puree, turmeric, coriander, pepper and ginger as mentioned. Allow it to cool naturally and transfer it to a food processor. Process until it turns smoother, you can add water if needed.

Step 5: Reheat on very low flame just before serving with swirl of natural yoghurt. You can serve that with chapatti or wholegrain bread.

Time for cooking Vegetable Mix – Approximately 1 hour 45 minutes

Makes amount of: 2.7 liters or 4½ pints

Required ingredients for making Vegetable Mix (the quantity of 2.7 liters; 4½ pints):
3 medium leeks (sliced coarsely)
3 medium sized onions (chopped roughly)
5 roughly chopped medium sized carrots
3 medium sized celery sticks roughly chopped
Sliced cabbage leaves (3)
1 head of sliced lettuce
1 bay leaf
6 springs of flat leaf parsley with roughly chopped stems
3 springs of thyme
3.6 liters or 6 pints of cold water

Method of preparation of Vegetable Mix
• Slowly boil all the ingredients in a saucepan to skim off remaining scum. Allow the portion to boil on low flame for about an hour without disturbing or stirring the portion.
• Filter it properly but not to press any ingredient through strainer. Cover and refrigerate the portion after it becomes cool.
